The aging and blending process is more robust for Anejo, as the master blender must distinguish more subtle notes from barrels over three years old, with a wide range of complexity from each barrel. The aging and blending process creates the rich and complex Cincoro taste profile, balancing the uniqueness of the agave profile with time aging in specially selected barrels.
